Is ultra short throw worth the premium?

When the room gives you no choice, yes, because the alternative is no projector at all. When you could mount at the back or on the ceiling, a standard projector at the same price usually has a better lens and better contrast.

Can I put an ultra short throw projector on any wall?

You need a very flat wall or a screen made for ultra short throw. The light arrives from below at a steep angle, so an ordinary screen scatters it badly and a standard light rejecting screen can make it worse.
